I’m not a woman of many talents, but one thing I can do is cook – it’s the extent of my creative abilities. I can’t draw, or paint, or even assemble IKEA furniture very well, but I can whip up a mean beef bourguignon. That said, I love to take a day off and go out to eat, especially on Mother’s Day. Since that’s just not possible this year, I’m putting in some requests to my family for my favorite copycat recipes they can re-create at home. I’ve even included a retro Huntsville favorite!

Dole Whip and Churros
You’ve probably heard by now that Disney released several of their closely-guarded recipes they serve in the parks. My absolute favorite is Dole Whip – I treated myself to my first one when the kids begged to go in the Tiki Tiki Tiki Tiki Tiki Room for the 4th time in a row at Disney World. My husband took them and I enjoyed this cold, pineapple bliss of a treat instead. It was a lovely motherhood moment for me. Just don’t make the mistake I made when I tried to re-create Dole Whip at home – have a pastry bag ready to go to pipe in the swirl. Otherwise it will freeze hard as a rock and you have to chisel it out of the container.

Doubletree Signature Cookies
I was skeptical when I tried these cookies. There’s no way it can include that many walnuts and chocolate chips! But trust me – stick to the recipe and these will be your new favorite cookie. I chilled my dough for about an hour after mixing it up, and I was a tad bit short on chocolate chips – thanks to my oldest son filching them from the pantry – so I used half a cup of white chocolate chips to make up the difference. I’m not mad at it.
IKEA Swedish Meatballs
Any time my family makes a trip to Atlanta, we always try to work in a stop at IKEA. If we’re very lucky, it’s close to lunchtime and we can pop into the cafe for their infamous Swedish Meatballs. Don’t knock ’em until you try ’em. They’re savory and creamy, and if you eat them the right way – with lingonberry jam on the side – they have a sharp sweetness too. A very clever gift-giver will add an IKEA gift card with a batch of these meatballs.
Krispy Kreme Doughnuts Copycat Recipe
On the day I got my driver’s license, I drove myself to the Krispy Kreme on the Parkway to get a doughnut for my 16th birthday. (OK, so I got 16 doughnuts and shared them with my friends.) I thought it was lucky that as I was pulling into the parking lot, the “Hot Now” sign lit up in a blaze of sugary glory! If you’ve never had piping hot ring of fried dough from the KK you’re really missing out. But now you can try this Krispy Kreme copycat recipe at home!

Phuket’s Jungle Curry
Whenever we get a date night, chances are good my husband and I end up at Phuket in the Village of Providence. We love Thai food, and have never had a bad meal there. Jungle Curry is one of our go-to dishes, so I was super excited when the Chef Tukky released their recipe! Add more curry if you like it Thai hot!
2 Tablespoons vegetable oil
1 Tablespoon red curry paste
½ pound chicken breast, thin sliced into one-inch strips
1 can coconut milk
½ cup thinly sliced bell pepper
1 cup sliced zucchini
1 cup bamboo shoot
1 teaspoon paprika
2 Tablespoon fish sauce
1 Tablespoon salt
1 tablespoon sugar
½ cup basil leaves
1. Heat oil under medium heat in a large saucepan or deep skillet, then add the curry paste and stir fry for several minutes until fragrant. Add the chicken and coconut milk and heat until boiling, then reduce to simmer.
2. Add bell pepper, zucchini, bamboo shoot, and cook vegetables for 5-10 minutes until tender. Add fish sauce, salt, and sugar. Add basil leaves and turn off the heat.
3. Serve with steamed rice.
Zesto Dip Dog
This copycat recipe is for moms who were teens in Huntsville in the 90s. Zesto’s was a dive in Five Points Huntsville that closed its doors in 2004 and was rumored to have invented the corn dog. You don’t need to break your curfew or have big hair anymore to enjoy a Dip Dog Zesto-style!
1 pkg hot dogs
2 cup self-rising flour
1 cup self-rising cornmeal
1 cup Carnation milk
1 cup water
Heat oil to 350; skewer hot dogs; dip hot dogs in batter; cook till golden brown
